Inventive Parents’ Favorite Pancake Recipe
for Slow Weekends and Rushed School Days
and other Fun, Fast and Good For You ideas. 

2c white whole wheat flour
2Tbl Florida Crystals “natural” sugar
1/2tsp Salt
4tsp Baking soda
1tsp cinnamon or ginger to taste
2c Skim milk
2 Eggs, beaten
4Tbl Oil
     Wisk dry ingredients together until well blended. (We like the King Arthur white whole wheat because it passes the Kid taste test and Mom nutrition test with flying colors. We like the added flavor and less processing of the Florida Crystals, but sugar is sugar.) Leave a well as you would if making muffins.
     Mix the wet ingredients together. We use a 2c measure, break the eggs in and wisk them a bit, then add the oil. This cuts down on time of pouring here and there, and clean-up by having only 1 more dish.
     Add the wet to the dry ingredients and wisk together until just moistened.. Heat a griddle on medium high until water dances. Pour about 1/4c batter out for each pancake. Flip pancake when the top bubbles and edges are a bit dry.
     Place batches on a serving plate and cover with a towel. Keep warm in a 250* oven while cooking the rest of the pancakes.
Options:
     Add fresh blueberries to batter before cooking. If using frozen berries, thaw, rinse and let sit on a paper towel to remove excess water.
     Add 6-12 chocolate chips as soon as pancakes are on griddle. Our kids and their friends do not use syrup on chocolate chip pancakes, so this option can save time and mess without adding much junk. Use a good semi-sweet chocolate, and you’re also adding micro-nutrients! The cinnamon really stands out on these and the blueberry pancakes, and is good for you.

Here's the best part, the part that helps you every other morning:

     Let “left over” pancakes cool to get rid of moisture. Place in a zip lock freezer bag, using wax paper to separate as necessary. Remove air from bag and freeze flat. When frozen you can separate them, using a table knife to pry apart if necessary, and slide them to the bottom of the bag to take up less space.
     To heat frozen pancakes, place in single layer, spread out on a microwave-safe plate. Cover and heat. You’ll have an “almost as good as fresh” hot, nutritious breakfast in a minute.
Fruit shake or smoothie - stick with favorite fruits, a bit of juice and plain yogurt before adding proteins, and all the other good for you things.  You don't want so much of a good thing that your kids won't drink them.
Egg or bagel sandwich – place a piece of deli ham in a skillet, cook; place 1 slice of cheese on ham, cover and cook until cheese melts. Meanwhile, toast an english muffin or small bagel. Fry or microwave 1 egg white. Assemble sandwich and serve.
     Use dishwasher-safe utensils, and there’s almost no clean-up. Half of these sandwiches may be more than enough for many children and adults.
